Quinoa, Tomato and Red Pepper Soup
This is a really tasty versatile soup which has a taste of bolognaise. You could use it as a bolognaise sauce but it gives a sweet flavour. Add more water for a thinner soup.
If you can’t eat this all in one go, put it in a container and into the fridge and, in our opinion, you’ll find it’s even more tasty the next day!
Ingredients: Quinoa, red peppers, vegetable bouillon (Salt, Modified Maize Starch, Rapeseed Oil, Sugar, Tomato Powder, Natural Flavouring, Yeast Extract (Yeast Extract, Salt, Acidity Regulator (Citric Acid)), Spinach Powder, Onion Powder, Spice Extract, Nutmeg, Acidity Regulator: Citric Acid)), tomato powder, onion, Italian seasoning, garlic, thyme.
Allergens: in bold
To make: Add packet to pan with 2½ pints water. Bring to boil and then simmer for 30 mins. Add more water if required. Season to taste. Serves 4+
