Tomato and Red Pepper Risotto


We’ve been asked many times for a meat free risotto which is tomato based. So, here it is. Tastes delicious, ready in around 20 minutes and feeds 3 main meal size portions or 4+ smaller portions if you’re teaming it with a salad or crusty bread. We hope you enjoy this as much as we do.

Ingredients: Arborio rice, dried red peppers, tomato powder, vegetable bouillon (Salt, Modified Maize Starch, Rapeseed Oil, Sugar, Tomato Powder, Natural Flavouring, Yeast Extract (Yeast Extract, Salt, Acidity Regulator (Citric Acid)), Spinach Powder, Onion Powder, Spice Extract, Nutmeg, Acidity Regulator: Citric Acid)), Italian seasoning, parsley, garlic and pepper

Allergens: in bold

To make: Place the packet contents in a pan with 2¼ pints of water. Bring to the boil then reduce heat and simmer for 20-30 minutes, stirring regularly. Serve when all liquid has been absorbed into the rice. Season to taste. Serve with bread and/or salad. Serves 4
