Tomato and Red Pepper Risotto
We’ve been asked many times for a meat free risotto which is tomato based. So, here it is. Its been tested by 3 families through a Facebook post asking for taste testers. All 3 enjoyed their risottos and from feedback we have only tweaked the amount of garlic. Tastes delicious, ready in around 20 minutes and feeds 3 main meal size portions or 4+ smaller portions if you’re teaming it with a salad or crusty bread. We hope you enjoy this as much as we do.
Ingredients: Arborio rice, dried red peppers, tomato powder, vegetable bouillon, Italian seasoning, parsley, garlic and pepper
Allergens: Gluten Free / Vegan
To make: Place the packet contents in a pan with 2¼ pints of water. Bring to the boil then reduce heat and simmer for 20-30 minutes, stirring regularly. Serve when all liquid has been absorbed into the rice. Season to taste. Serve with bread and/or salad. Serves 4
